Unconventional Pairings of popular Portuguese wines and dishes.
Piri-Piri, in the mouth of the Portuguese sounds naturally spicy and peppery. Throughout the country, every restaurant has its "special" and secret Piri Piri sauce recipe. Also unique is each restaurant's way of roasting the chicken to which the sauce adds layers of flavor to the crispy skin of irresistible spicy caramelized.
With the juicy wing in the licked hand and the glass in the other hand, a very special wine, might be excessive for the occasion. A light red wine would be the most common choice. But pleasure also arises from boldness.
Take a less conventional risk and combine the Piri-Piri chicken with fresh white wine, which will "put out the fire" of the spiciness, and the fruitiness will take care of the rest.
The white wine that puts a satisfied smile on our faces at the end should be medium-bodied, fruity and enveloping, and have acidity spreading the freshness that confronts the fat and at the same time aligns with the crispness of the skin.
