Quinta do Rol, a journey through time.

Each vineyard parcel is unique and special, as each one contributes in a distinct way to the quality, flavor, and personality of each wine.

The relationship between man and wine has been a long and complex, in which the two have been involved in many ways over the centuries.

The winery built in the 1950's, was restored, but kept its original features. The new and the old, the endless cycle of generations where each one brings something unique.

The sparkling wines at Quinta do Rol are among the very few in Portugal that age over 10 year on lees before dégorgement.

Rémuage, twenty-one days to the ideal position.

The Classic Method, 120 bottles per "pupitre".

This beauty is ready for dégorgement. Under construction is a "Solera" type sparkling wine, a method that requires "nerves of steel and lots of patience."

Distillation continues just as it did 100 years ago, until a very neutral alcohol is obtained.

Charentais Alembic. Here everything is decided by tasting.

A journey through time. 100 thousand liters in stock, more than 30 years of "aguardentes".

The aromas make you feel the brandy. This winery uses four different woods, national oak, national chestnut, Allier, and Limousin. Some Cognac barrels are also being added.

The history of each barrel is neatly identified. "Each barrel is an ingredient, just as a chef uses spices, or an artist chooses colors."

At the table, the "aguardente" takes a key rol, finishing off the meal with a wealth of complex flavors and elegant aromas.
